Low Carb Lemon Cheesecakes

Creamy and delicious no bake Low Carb Lemon Cheesecake with a buttery almond crust.  Even if you are not on a low carb diet, you will love this!

I am obsessed with this cheesecake.

If you are following a low carb diet like I am, you are probably looking for the occasional sweet treat.  This has become my favorite.  It is so simple.  It starts with an easy almond crust that includes almond flour, melted butter and a pinch of Splenda or your favorite sugar substitute.  You will need to pop the crust in the oven for a few minutes.  Once it is cool, add an easy, no bake cheesecake filling that will knock your socks off.  It is simply cream cheese, heavy whipping cream, a splash of vanilla which is optional and a packet of sugar free lemon jello.  How easy is that!

The filling sets perfectly and before you know it you will be indulging on a piece delicious, guilt free low carb cheesecake.  Even if you are not on a low carb diet, you will love this!

You can use any sugar free jello flavor you want.  Lemon seems to be a classic cheesecake flavor, but I have tried cherry, raspberry and strawberry.  Orange would be great, or even lime for a key lime cheesecake, yum!  

You can even customize how you make it.  I have made these as mini cheesecakes using a cupcake pan.  Just line a 12 cupcake pan with paper liners, press a little of the almond crust to the bottom of each cup and bake for about 6-8 minutes.  Once cool, add the filling and chill for a few hours until set.  Super easy.  These also make cute little desserts in jars too, great for a spring picnic in the park!  

So go ahead, splurge and enjoy this yummy guilt free, low carb dessert!  

  1. Preheat oven to 350 degrees. Generously spray an 8-inch baking dish or springform pan with cooking spray.
  2. Mix almond flour, butter and splenda until mixture is crumbly. Press in the bottom of baking dish and bake for about 8-10 minutes until golden brown.
  3. Cool completely.
  4. Cheesecake
  5. Using an electric mixer with the whisk attachment mix cream cheese until smooth and creamy.
  6. Stir in vanilla extract.
  7. Add in heavy cream and whisk on high until mixture thickens and soft peaks form.
  8. Reduce speed to low and mix in jello packet and lemon zest until blended.
  9. Spread mixture evenly with a spatula over cooled crust.
  10. Cover and chill until set, about 2-3 hours or overnghs

MINI CHEESECAKES – Line a 12 cup cupcake pan with paper liners. Press a small amount of crust on the bottom of each liner. Bake in a 350 degree oven for about 7 minutes until golden brown. Cool completely. Prepare filling as directed and divide the mixture between each cup. Chill for several hours or overnight. Serve with liner or unwrap before serving. 
CHEESECAKE IN A JAR – Divide crust mixture between jars and press into the bottom. Bake in a 350 degree oven for 7-9 minutes until golden brown. Prepare filling as directed and spoon into each jar. Cover and chill for several hours or overnight until ready to serve.

No Bake Reese’s Truffles

Yay, it’s finally Friday! Who’s up for another Fun Foodie recipe? No bake truffles are so popular right now and they’re perfect for summer! No heating up the oven or any intense step by step instructions. They’re so easy! This week I used my FAVORITE candy in the world, Reese’s Cups! I even bought the minis so I wouldn’t have to waste time unwrapping them before whipping up these beauties.

No Bake Reese’s Truffles

  • 8 ounces of softenedPhiladelphia cream cheese
  • 1/2 cup creamy peanut butter
  • 2 tablespoons granulated sugar
  • 1 package of Reese’s mini peanut butter cups, roughly chopped
  • 2 cups chocolate chips with 1 teaspoon of shortening


Stir together all four ingredients until smooth. This recipe doesn’t get any easier, folks! The batter will be soft, so you need to freeze it for at least 15 minutes. Or stick it in the fridge until you’re ready to make truffles. Using a cookie scoop or table spoon (or your hands!) roll out your truffles. I got 16 with my scoop. You can make them as small or as large as you’d like. Stick them back in the freezer for at least 30 minutes.

Melt your chocolate chips & shortening in the microwave, stirring after every 30 seconds. I used dark chocolate chips, but you can use milk chocolate or even white chocolate.


Dunk your frozen truffles in the chocolate and set them down to harden. I used two forks and had a pretty good dunk and scoop assembly line going. The chocolate will be soft so once you’re done, go ahead and stick them back in the fridge to harden completely.


Good gosh, I could barely wait to sink my teeth into these bad boys! Peanut butter and chocolate is pretty much my favorite combination EVER!


These would be great with m&ms or any chocolate caramel candy. If peanut butter isn’t your thing, you can use almond butter. If nuts aren’t your thing, you can replace the peanut butter with 1 cup of marshmallow fluff OR 3/4 cup of powdered sugar. Add your favorite candies and top with chocolate.

Your Favorite Lip Gloss
Peppermint Essential Oil
Small Jar or Container (.5 oz or 1 oz) – Optional

1. Add 1-2 Drops of Peppermint Oil into your favorite Lip Gloss

3. Apply as usual!

How to Make Raspberry Lip Balm

I really like to have lip balm on hand but those all natural lip balms can be a little expensive for the amount you get in a package. But making lip balms at home isn’t hard at all and it only takes a few ingredients too. Here’s how to make raspberry lip balm at home in a few minutes with just a few ingredients.

I love this diy raspberry lip balm. It’s easy to make with just five ingredients and just a few minutes of time. I’ve made a couple of batches of this lip balm and I really like it plus everyone I’ve shared it with loves it too. If you want to get started making your own beauty recipes this one is definitely a great one to start with.
 Raspberry Lip Balm
  • 1 teaspoon Beeswax Pellets
  • 1 teaspoon Shea Butter
  • 1 teaspoon Coconut Oil
  • ½ teaspoon Honey (I use raw honey)
  • 1-2 drops Raspberry Flavoring
  • ¼ teaspoon Red or Pink LipStick (optional)
  1. Place the beeswax pellets, shea butter, coconut oil, and honey in a microwave safe bowl. Microwave at 10-second increments until it is melted.
  2. Stir to combine.
  3. Add the raspberry flavoring and the lipstick if desired. Stir to combine
  4. Pour into the lip balm tins and let cool.

Tips for Making Your Own Raspberry Lip

If you want to tint the lip balm, use a little lipstick and stir it into the melted oils. Don’t use food coloring. I discovered the hard way that food colors will not mix in. I ruined one batch in the process of making this lip balm.

The flavorings can be strong so only add one or two drops to the first batch. Then if it’s not strong enough increase for the next batches. I like just a little flavoring and since this is a small batch one or two drops is usually plenty.

Don’t microwave the oils too long without stirring in between intervals. It can scorch they honey in the recipe. Play it safe and stir every 10 seconds or so.

If your microwave safe container doesn’t have a spout then you’ll want to use a spoon to spoon the melted lip balm into the container. I’ve found that pouring it from a bowl can be hard and you can easily lose some over the edge and dripping down the bowl. It also makes a mess.

Let the lip balm sit on a flat surface while hardening and don’t touch it until it’s firm. If you touch it before it hardens it won’t have a nice smooth surface, it will be bumpy instead. Let it sit and fully cool before handling it.
